Stuffed French Toast
Not only does this French toast look good, but it also hides a delicious surprise inside! The slices are stuffed with Biscoff spread, so you’ll cut into pockets of melted Biscoff.
The brioche bread is cut into thick slices because it holds the melted Biscoff inserted into it. If the bread is too thin, then the spread will bleed through.
Recipe Ingredients
Below are the ingredients needed for this recipe:
- Brioche Loaf Bread: I love making French toast with brioche bread, the texture is soft, fluffy and so tender.
- Egg: Used to make the French toast batter; I used a large egg.
- Milk: I used full fat milk; only a small amount is needed for the mixture.
- Biscoff Spread: The star of the show! Use smooth or Crunchy Biscoff spread.
- Caster Sugar: To add a slight sweetness to the batter; only little is needed especially when adding sweet toppings like syrup or ice cream.
- Cinnamon: To add extra flavour.
- Vanilla Extract: To add extra flavour, this is the best vanilla extract ever.
- Butter: This is what the brioche is fried in; salted or unsalted butter is fine to use.
- Toppings I like to add ice cream, drizzle more Biscoff spread and crush Biscoff biscuits on top. What toppings you choose is up to you!

How To Make Biscoff French Toast
Below is a step-by-step guide on how to make Biscoff stuffed French toast. Full recipe instructions are on the recipe card.
Step One:

If you’re using a loaf of bread, cut the bread into thick slices. They should be roughly 5cm thick.
For each slice, cut a small slit in one of the sides. The slit should be in the middle of the side and reach the centre of the bread.
Step Two:

In a mixing bowl add milk, caster sugar, vanilla extract, cinnamon and an egg. Whisk until combined.
Step Three:

Melt the Biscoff spread in the microwave for a few seconds, it should be slightly runny. Using a spoon or piping bag, pipe the Biscoff mixture into the slits made.
Step Four:


Heat a frying pan on a low to medium heat and add a tablespoon of butter (add more if necessary).
Dip the slices of bread (on both sides) into the French toast batter and fry for 2 to 3 minutes or until golden brown on each side.
Add your toppings and enjoy!

What’s the best way to serve Biscoff French toast?
By drizzling even more Biscoff spread of course! I love to add ice cream and crushed Biscoff biscuits on top too. The biscuits add a delicious crunch to the fluffy bread pieces.
You can keep the toppings simple with a dusting of icing sugar or a drizzle of honey or golden syrup. Even if you have this French toast plain it will still taste incredible.

The main culprits for soggy French toast are either soaking the bread in the custard for too long or adding too much milk to the mixture.
A great way to avoid this is to slightly toast the bread before starting the recipe. You could also lightly coat the bread in the custard as opposed to letting it soak.
My top three choices are brioche bread, challah bread and a baguette.
However, brioche bread is my top pick for a making a delicious French toast. Brioche is light, soft and fluffy which makes it suitable for these types of dishes. However, you can make French toast with a variety of different breads.

My Top Tips
Buy a loaf of brioche bread instead of pre-sliced bread, you’ll be able to cut the bread to the appropriate thickness.
If you’re using plain bread or thin slices of bread for this recipe, only dunk them into the French toast batter for a few seconds. Soaking thin slices for too long will result in too much batter absorption and the French toast will turn out soggy.
If you’re using thin slices, spread the melted Biscoff on one slice of bread and top with the other slice of bread like a sandwich. It will be difficult to inject the Biscoff into thin slices.
If the heat is too high the French toast will brown too quickly, turn the heat down If the toast is browning too fast.
