Cheese And Bacon Turnovers (Greggs Wrap Copycat)
These delicious bacon and cheese turnovers are my idea of the perfect breakfast or snack. I think you’re really going to love this recipe. Let’s get baking…
Everyone loves Greggs’ cheese and bacon wraps, but if I do say so myself, this homemade version tastes just as good – in-fact, I think it’s even better!!
All you need is 4 ingredients (one of which is readymade puff pastry), and the rest, I’m sure you’ve guessed, are bacon, eggs and cheese. It’s so easy to put together, it feels like I’m revealing a big secret – sorry Greggs.
I LOVE making this because it’s a delicious combo of bacon and cheesy goodness that’s wrapped in flaky puff pastry. I’m not kidding when I say these turnovers are absolutely delish!
I’ve noticed that they are quite popular with you all! And actually, I’m not surprised, it takes no time to cook, it’s so easy anyone can make it, and of course it tastes so good too.
If you love Greggs just as much as me, then I think you’ll also love my yum yum recipe, these puff pastry sausage rolls and this chicken mayo sandwich!
Recipe Ingredients
I’ve listed below the ingredients I used to make this recipe:
- Puff Pastry: I used readymade puff pastry that’s pre-rolled in parchment paper.
- Bacon: I used unsmoked streaky bacon, though you can use smoky bacon for that salty taste. Streaky bacon cooks at the same rate as the puff pastry, which makes it perfect to use.
- Cheese: I used extra mature cheddar cheese for a richer flavour.
- Egg: An egg is used to egg wash the pastry before it’s baked in the oven. This helps to create a golden-brown colour and seal the pastry together.
TIP: Use unsmoked back bacon if you want to create an exact replica of Greggs’ bacon and cheese wrap (that’s what they use).
Don’t Cook The Bacon, Unless…
If you are using streaky bacon which I usually use, then don’t cook the bacon. However, whenever I’m using a thicker piece of bacon, I like to cook the bacon for a few minutes beforehand to par-cook it and let the bacon fully cook in the oven.
How To Make Cheese And Bacon Turnovers
Here’s a summary of how I make a bacon and cheese turnover. You can get the full recipe instructions on the recipe card below:
Step One:
I like to take the pastry out of the fridge and leave it to thaw for a few minutes before starting. Once it’s thawed, I unroll the puff pastry sheet and use a sharp knife or pizza cutter to divide it into 8 squares.
Step Two:
I place a piece of bacon diagonally across 8 pastry squares, then top it with cheese.
Step Three:
I fold one corner of the puff pastry sheet into the middle and egg wash the folded corner. Then I fold the corner on the opposite side on top and gently press it down so that they don’t unfold in the oven. Once that is completed, I egg wash the pastry.
(Check out my video in the recipe card to see how I did this)
Step Four:
Last but not least, I bake the turnovers in the oven for 20 minutes or until it’s golden brown and flaky.
My Top Tips
Use pre-rolled puff pastry instead of getting a block of puff pastry as you’ll have to roll it out evenly yourself.
Leave the bacon and cheese turnovers to cool down for 5 minutes before eating. Fresh from the oven the pastries will be soft, they will crisp-up after a few minutes.
Sometimes I like to cut the excess pieces of bacon that’s hanging off the edges to create a uniform finish (but this is only when I want them to look perfect).
How To Serve Cheese And Bacon Turnovers
Usually, I have a bacon and cheese turnover for breakfast or as a snack, so I love having them by themselves.
That being said, you can easily turn this recipe into a heavier meal or lunch. I would serve it with a salad, oven roasted chips or some roasted veggies like this tenderstam broccoli.
How To Store, Freeze & Reheat
If I have any leftovers, I leave the turnovers to cool down before placing them in an airtight container and storing in the fridge. You can eat them cold or reheat them in the microwave or oven.
I prefer reheating in the oven because the turnovers can become soggy when reheating in the microwave.
Whenever I want to make them ahead of time, I prep the turnovers by assembling the bacon and cheese (do not egg wash them!!). I place the turnovers on a large tray and place it in the freezer. Once hardened, I transfer the turnovers to an airtight container and freeze for up to 2 months. They’re good to cook from frozen. This way, you can reheat one bacon and cheese turnover at a go.
