In just 30 minutes you’ll be tucking into a warm puff pastry turnover with bacon and cheese goodness in every bite. This recipe is so easy to put together it feels like I’m revealing a big secret (sorry Greggs).
It’s so easy to make, only requires 4 ingredients (one of which is ready-made puff pastry) and you only need to assemble and bake.

If you do not live in the UK or have never been to Greggs before, a cheese and bacon turnover (or wrap) is bacon and cheese that is wrapped in a blanket of puff pastry. This recipe is so popular due to its super-fast cooking time, it’s so easy anyone can make it and of course because it tastes so good.

With this recipe we’re making a classic cheese and bacon turnover using the 4 ingredients below:
- Puff Pastry: Using ready-made puff pastry is the key ingredient in this bacon and cheese turnover recipe. It’s why the overall prep and cooking time is only 30 minutes.
- Bacon: Unsmoked streaky bacon is used in this recipe, it’s quite thin so cooks quickly. The bacon cooks at the same rate as the puff pastry, so using streaky bacon makes the perfect combination.
- Cheese: I used extra mature cheddar cheese for a richer flavour.
- Egg: An egg is used to create the egg wash which coats the pastry before being baked in the oven. Is an egg wash just egg? Yes, to create the egg wash simply whisk an egg. This helps to create the golden-brown colour when the pastries are baked. Though this looks great, using an egg wash is optional.
Puff pastry is made by alternating layers of butter and pastry. It’s widely available and can be found in the fridge section of many supermarkets. Greggs bacon and cheese wrap uses puff pastry, this is why the pastry is so flaky and buttery. It’s the ideal texture for this savoury treat.

What Bacon To Use For The Turnovers?
I like to use streaky bacon mostly because it cooks at the same time as puff pastry. This way there’s no need to prep the bacon by par-cooking it beforehand, making this recipe super quick and easy.
Use unsmoked back bacon if you want to create an exact replica of Greggs’ bacon and cheese wrap (that’s what they use).
Do You Cook Bacon Before Putting In Puff Pastry?
If you are using streaky bacon no but you might prefer a different type of bacon like smoked back bacon rashers. If you’re using a thicker piece of bacon, cook the bacon for a few minutes beforehand to par-cook it. The bacon will cook completely after being baked in the oven.

How can I cook bacon?
You can grill bacon in the oven or alternatively use a frying pan and heat the bacon on a low-to-medium heat until cooked. For this recipe, par-cook the bacon in advance if you are not using streaky bacon but a thicker piece of bacon.
What Cheese To Use For The Turnovers?
The extra mature cheddar cheese I used was very crumble when slicing it, so there was no need to grate it. On other occasions I buy pre-grated cheddar cheese to make my life easier.
You can buy grated cheddar cheese or buy a block of cheese and grate it yourself. The type of cheese you buy is entirely up to your preference. If you do not like strong cheeses, you can go for a mild cheese instead of mature or extra mature.
Want it like Greggs? They use a slice of tangy cheddar cheese.

How To Make Cheese And Bacon Turnovers
Here’s a step-by-step guide on how to make bacon and cheese puff pastry turnovers. Full recipe instructions are on the recipe card:
Step One:
Preheat your oven to 180°C (gas mark 4, 160°Fan) and line a baking tray with parchment paper.
Usually, the ready-made puff pastry will come rolled into parchment paper already. If that’s true for you, then you can use the parchment paper that came with the pastry.
Step Two:

Unroll the ready-made puff pastry sheet. With a sharp knife or pizza cutter, divide into 8 squares.
Step 3:


Place a piece of bacon diagonally across the pastry, then top with cheese. Repeat this for all puff pastry squares.
Step 4:


Fold one corner of the puff pastry sheet into the middle. Egg wash the folded corner.
Fold the corner on the opposite side on top, gently press down so that they don’t unfold in the oven. Brush over with an egg wash.

Bake in the preheated oven for 20 minutes or until golden brown and flaky, leave to cool down for 5 minutes and enjoy! That’s how to make bacon and cheese turnovers, easy right?
Top Tips For The Best Cheese And Bacon Turnovers
- Take your puff pastry out of the fridge for at least 15 minutes before unrolling. This is to prevent the pastry from breaking when unrolling. This happens when the pastry is too cold.
- Use puff pastry that is pre-rolled, buying a block of puff pastry means that you’ll have to roll it out evenly. You can use a block of puff pastry; it just takes longer to roll out and requires more effort.
- Leave the bacon and cheese puffs to cool down for 5 minutes before eating. Fresh from the oven the pastries will be soft, they will crisp-up after a few minutes.
- Cut excess pieces of bacon hanging off the edges to create a uniform finish.

That being said, you can easily turn this recipe into a heavier meal or lunch. Serve with a salad, oven roasted chips or tenderstam broccoli.

- Make it vegetarian: Instead of using bacon, add in tomatoes, asparagus or fill the pastry with a variety of your favourite cheeses.
- Turn them into cheese and bacon twists: Unroll the puff pastry and line it with bacon and cheese. Fold the puff pastry sheet in half and cut into 1.5cm strips. Pinch the two opposite ends of one strip and twist in the opposite direction 3-4 times and place on a baking tray lined with parchment paper. Repeat for all pastry strips. Bake in the oven for 20 minutes or until flaky and golden brown.
- Change The Pastry: You can make this recipe with shortcrust pastry or filo pastry if you want to change the texture.
