My Quick Chicken & Mushroom Pie

This pie has been my ultimate go-to for a no-fuss, yet seriously delicious dinner, for YEARS. It’s topped with golden, flaky puff pastry (that’s readymade, of course) and filled with a timesaving filling you’re going to love.
Gone are the days of simmering chicken stock because now I use cream cheese for the richest and creamiest filling ever! It’s not just delicious, it’s a complete time-saver too!
Altogether, this is one great tasting dish. You can season the filling to your liking, or alternatively, you can stick with my seasoning recommendations.

Recipe Ingredients
Here are the ingredients I used to make this dish:
- Puff Pastry: Use a pack of pre-rolled puff pastry. Leave it to thaw for a few minutes before use.
- Chicken: I used boneless diced chicken breast.
- Vegetables: The vegetables I use for this dish are mushrooms, leeks and diced onions.
- Seasonings: To flavour this dish, I added: soy sauce, garlic granules, onion granules, turmeric, mixed herbs, black pepper, chilli flakes and salt.
How To Make Chicken And Mushroom Pie
Here’s a summary of how I make this pie. You can get the full recipe instructions on the recipe card below:




I start by marinating chicken in a mixture of garlic granules, onion granules, black pepper, mixed herbs, salt and chilli flakes.
Then I dice all my vegetables, heat a pan over a medium heat and stir-fry onions, mushrooms and leeks until they have cooked down and starting to brown (roughly 5 to 7 minutes).
Next, I add the diced chicken and stir-fry until opaque on all side before adding the cream cheese and seasonings. Then I mix everything together for 3 to 5 minutes.
The filling is poured into my pie dish, and I top it with a layer of puff pastry. I egg wash the pastry and then bake it in the oven for 10 to 15 minutes or until the pastry has puffed up and is golden brown in colour.
How To Serve

Ingredients
- 1 Readymade Puff Pastry Pack
- 500 g Diced Chicken
- 600 g Cream Cheese
- 300 g Mushrooms
- 1 Leek
- 1 Onion (Diced)
- 1 Egg (Optional: For Egg Wash)
Sauce Seasonings
- 1 tbsp Garlic Granules (Or Powder)
- 2 tbsp Soy Sauce
- 1 tbsp Onion Granules (Or Powder)
- 1 tsp Black Pepper
- 1 tsp Chilli Flakes
- 1 tsp turmeric
Chicken Marinade
- 1 tbsp Garlic Granules (Or Powder)
- 1 tbsp Onion Granules (Or Powder)
- 1 tbsp Mixed Herbs
- 1 tsp Black Pepper
- 1 tsp Chilli Flakes
- 1 tsp salt (Or To Taste)
Instructions
- Marinate the chicken with garlic granules, onion granules, black pepper, mixed herbs, chilli flakes and salt, then set aside for later use.500 g Diced Chicken, 1 tbsp Garlic Granules, 1 tbsp Onion Granules, 1 tbsp Mixed Herbs, 1 tsp Black Pepper, 1 tsp Chilli Flakes, 1 tsp salt
- Dice the leek, onion and mushrooms. Heat a pan over a medium heat, then stir-fry the vegetables until they have cooked down and softened.300 g Mushrooms, 1 Leek, 1 Onion
- Add the diced chicken and stir-fry until it's opaque on all sides.
- Add the cream cheese and seasonings, then mix everything together for 3 to 5 minutes or until combined and creamy.600 g Cream Cheese, 1 tbsp Garlic Granules, 2 tbsp Soy Sauce, 1 tbsp Onion Granules, 1 tsp Black Pepper, 1 tsp Chilli Flakes, 1 tsp turmeric
