Quick & Easy Dried Fruit Flapjacks
These dried fruit flapjacks are incredibly tasty and come together really fast. I’ve already eaten three, and I haven’t even finished writing this post yet…
Flapjacks are one of those recipes that everyone seems to love, and let me tell you, these dried fruit flapjacks are no exception! They make the perfect on-the-go snack, and of course, they’re popular amongst kids too.
The base texture is soft, moist and chunky – now imagine that paired with a nice cup of coffee! And to make everything even better, the dried fruit adds a touch of sweetness, chewiness, and a whole lot of fruity goodness.
I’m always making these flapjacks because they’re super quick and easy, and I am certainly not joking about how fast they are to make. They only take 10 minutes to whip up, and a further 25 minutes to bake in the oven.
I have a couple of flapjack recipes on the site now, and after a few requests for a fruity version of my much-loved gooey flapjacks, I just couldn’t resist making it. So, here’s the recipe!!
I hope you like it; it’s been a big hit in my house. In fact, a plate of these flapjacks was gone in under an hour!! I’m also a huge fan of this dried fruit version, though my cherry bakewell flapjacks will always be one of my favourites.

Fruit Flapjack Recipe Ingredients
You only need a few basic ingredients that come together to create these delicious flapjacks. I’ve listed the ingredients below:
- Porridge Oats: Use traditional porridge oats like ‘Scott’s Porridge Oats’ (that’s what I used).
- Butter: I like to use unsalted butter, but you could use salted butter if you prefer a salty taste in your sweet bakes. Alternatively, you can use unsalted butter and then add salt to taste.
- Golden Syrup: The glue to help combine all the ingredients together, it also adds a delicious flavour. I’ve written a post on golden syrup alternatives if you want to check out a few substitutes.
- Light Brown Sugar: Use light brown sugar (or golden sugar as an alternative), this adds a sweet caramelised flavour to the flapjacks.
- Vanilla Extract & Cinnamon: These two ingredients are optional additions. I like the flavour that vanilla extract and cinnamon adds to the overall taste, but you can leave it out if you want.
- Dried Fruit: I brought a bag of mixed dried fruit, and added a couple diced pieces of dried apricot. Use whatever dried fruit that you like or have at home at the time.
How To Make Fruit Flapjacks
Below is a step-by-step guide on how I make this fruit flapjack recipe, full instructions are on the recipe card below:
Step One:
Preheat your oven to 180°C (160°C Fan, gas mark 4) and line a baking tin with parchment paper. I used an 8″ (20cm) baking tin.
Add butter, golden syrup and light brown sugar to a large mixing bowl and melt in the microwave on a medium heat. Every 10 to 15 seconds stop the microwave and give the mixture a stir. Repeat this until the mixture has fully melted.
You can also melt the ingredients over a hob on a low to medium heat. Make sure to stir the ingredients constantly and remove the pan from the heat once the ingredients have melted together.
Step Two:
Add porridge oats, your choice of dried fruit, cinnamon and vanilla extract to the melted mixture and mix together until thoroughly combined.
Quick Tip: Make sure all the oats are generously coated, otherwise the flapjacks are likely to fall apart once baked.
Step Three:
Pour the flapjack mixture into a lined baking tin and spread it evenly into all four corners.
With the back of a spoon, press the flapjack mixture down. I like to use a clean spoon to help prevent sticking.
Step Four:
Bake in the oven for 25 minutes or until the corners have turned golden brown in colour. Once baked, allow the flapjack to cool down and slice into rectangles or squares. I cut mine into 12 rectangles.
How To Store
Store flapjacks in an airtight container at room temperature for up to 5 to 7 days. You can also place the flapjacks onto a plate and wrap it with cling film.
If you want to freeze them for later, you can! Simply pop them in freezer-safe bags and store it in the freezer for up to 2 to 3 months. Allow them to thaw first before eating.
How To Serve
I consider fruit flapjacks to be a snack eaten on their own or added to packed lunches. Though you definitely can’t go wrong with serving them with a homemade Biscoff latte or an orange hot chocolate.
My favourite out-of-the-box pairing would be freshly baked, warm fruity flapjacks with a dollop of honeycomb ice cream slowly melting on top – delicious!
Fruit Flapjack Recipe Variations
Instead of dried fruit, you can opt for frozen fruit like frozen raspberries or frozen blueberries. You don’t need to defrost them; just add them in from frozen. Bear in mind, the flapjacks might need a slightly longer time in the oven due to the heavier water content frozen fruit carries.
To add even more of a fruity flavour to this flapjack recipe, add grated orange zest, lime zest or lemon zest. You could also add orange or lemon extract as an alternative. There are so many dried fruit alternatives that you can use besides raisins, such as dried mango, pineapple, apples and bananas.
My Top Tips
If you find the spoon is sticking too much to the flapjack mixture when you’re trying to press it down. Place a layer of parchment on top of the flapjack mixture, then use a spoon to press it down (remove the top layer of parchment before baking).
I would avoid using large chunks of fruit to prevent the flapjacks from fall apart. Cut down any fruit that you’re using into pieces roughly the size of a raisin.
For thinner flapjacks, use a larger tin like a 9″ square baking tin.
