Fruit Flapjack Recipe

A tasty fruit flapjack recipe that's moist, soft and easy to make. These flapjacks are the perfect on the go snack and they taste so good.

Ingredients
 
 

  • 350 g Porridge Oats
  • 250 g Butter
  • 100 g Dried Fruit (Dried Fruit Of Your Choice)
  • 50 g Golden Syrup
  • 175 g Light Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon

Instructions
 

  • Preheat your oven to 180°C (160°C Fan, gas mark 4) and line a baking tin with parchment paper. I used an 8″ (20cm) baking tin.
  • Add butter, golden syrup and light brown sugar to a large mixing bowl and melt in the microwave on a medium heat. Every 10 to 15 seconds stop the microwave and give the mixture a stir. Repeat this until the mixture has fully melted.

    250 g Butter, 175 g Light Brown Sugar, 50 g Golden Syrup
  • Add porridge oats, your choice of dried fruit, cinnamon and vanilla extract to the melted mixture and mix together until thoroughly combined.
    350 g Porridge Oats, 100 g Dried Fruit, 1 tsp Vanilla Extract, 1 tsp Cinnamon
  • Pour the flapjack mixture into a lined baking tin and spread it evenly into all four corners. With the back of a spoon, press the flapjack mixture down. I like to use a clean spoon to help prevent sticking.
  • Bake in the oven for 25 minutes or until the corners have turned golden brown in colour. Once baked, allow the flapjack to cool down and slice into rectangles or squares. I cut mine into 12 rectangles.

Melting Options

You can also melt the ingredients over a hob on a low to medium heat. Make sure to stir the ingredients constantly and remove the pan from the heat once the ingredients have melted together.

If you're wondering what dried fruit to add to your flapjacks, I've listed a few ideas below:

For an extra burst of flavour and a tasty crunch, you can add a handful of dried seeds and nuts to the mix. When it comes to the fruit content, I find that 100g strikes the perfect balance, but if you're a fruit fanatic, feel free to up the ante to 130g for an even fruitier flavour.
