Homemade Banana Flapjacks
You need to try this banana flapjack recipe, it’s simple, easy and takes only 30 minutes to make. If you have leftover bananas, then you have to try this…
You know what they say, when life gives you bananas, you make banana flapjacks (and banana bread of course). These flapjacks taste so good that I made them every day for a week straight!
They’re soft, chewy, moist, naturally sweet and it’s the perfect snack for when hunger strikes. I like to have a couple for breakfast, but it also makes a great on the go snack too.
But wait, there’s more! Not only is this banana flapjacks recipe tasty, but it’s also naturally gluten-free and it’s packed full of fibre too. Consider this your go-to recipe for a healthier snack that you’ll actually want to eat.
No Refined Sugar Added
I’m a big fan of chocolate and sweet flapjack recipes (and there are many on this site), but this recipe is a great alternative for when you want to make flapjacks without the chocolatey and sugary additions.
Healthy is one of those terms that mean something different to everyone, so I’ll explain why this banana flapjack recipe is healthy to me.
It’s made with just 3 ingredients: banana, honey and oats. There’s no butter or refined sugars added, only natural sugars and sweetness from the bananas and honey. It’s packed full of fibre and I think it’s a great way of incorporating fruit and oats into your diet.
If you love flapjacks, then this recipe is no exception. It’s slightly sweet yet flavoured with banana for a delicious taste.
Why You’ll Like This Recipe
- Only 3 very basic ingredients!!
- You need just one mixing bowl and a baking tin
- There’s no melting in the microwave or over a stove
- This recipe is a great way to use up leftover bananas
Recipe Ingredients
Below are the 3 ingredients I used to make this recipe:
- Bananas: Use ripe bananas, it enhances the overall flavour of the flapjack, it’s softer, has a stronger banana flavour and is sweeter.
- Oats: Use any brand of porridge oats, do not use instant oats as the flapjacks will turn out mushy.
- Honey: Helps to bind the ingredients together and also adds natural sweetness too. If you want to make this a 2-ingredient banana flapjack recipe, then you can leave the honey out.
I always use a non-stick 9″ baking tin for the majority of my flapjack recipes and tray-bakes which make around 16 slices. You can get more or less depending on the size of portions you cut. If you want chunkier flapjacks, then you can use a smaller 8″ baking tin.
How To Make Easy Banana Flapjacks
Here’s a summary of how I make this banana flapjack. You can get the full recipe instructions on the recipe card below:
Step One:
I add peeled bananas to a mixing bowl and use a fork to mash the bananas together. I like to leave small chunks of banana as this keeps the flapjacks moist.
Step Two:
Honey is added to the mashed bananas, and I mix it together until it’s evenly distributed.
Step Three:
I pour the porridge oats into the mashed bananas and honey mixture and mix everything together until it’s thoroughly combined. Make sure all the oats are generously coated.
Step Four:
Next, the flapjack mixture is poured into the lined baking tin, and I spread it evenly into all four corners. Then, with the back of a spoon, I press the flapjack mixture down.
Step Five:
It’s baked in the oven for 15 to 20 minutes or until the edges have turned golden brown. Once baked, I leave the flapjack to cool down before cutting it into slices.
Banana Flapjack Recipe Variations & Substitutions
Swap Honey For Golden Syrup: If you don’t have honey, you can use golden syrup as an alternative. It will add a tasty caramel flavour to the flapjacks. For more alternatives to honey, check out these golden syrup substitutes.
Add peanut butter: Bananas and peanut butter go so well together; you can make a nutty banana flapjack by adding 80g of melted peanut butter to the mashed banana and honey mixture.
Can’t Resist Chocolate?: Drizzle melted dark chocolate (or any chocolate) on top for an enticing finish.
Add extracts Or Dried Fruits: You can add dried fruits, almond extract or vanilla extract for extra flavour. This would be similar to my fruit flapjack recipe.
How To Store And Freeze
Storing leftover flapjacks is fairly simple, I place leftovers in an airtight container and keep it at room temperature for up to 3 to 5 days.
If you’re keeping the flapjacks for any longer than 5 days, then I suggest you freeze it once it has cooled down completely. Place it in an airtight and freezer-safe container before storing it in the freezer for up to 3 months.
My Top Tips
Use ripe bananas, it’s key to making this recipe! If the bananas are not ripe then they will be harder to mash, it will be starchier, and the overall taste will not be as sweet.
For a more in-depth banana flavour, you can roast the bananas in the oven for around 15 to 20 minutes to caramelise before mashing it in a mixing bowl and adding honey then oats.
If you want to add more natural flavourings, then you can grate orange zest or lemon zest to add a citrus note. Or, you can add spices like cinnamon or nutmeg to take these flapjacks to a whole new level.
I always overhang parchment paper over my baking tin as it makes removal so easy. I simply need to pull the sides up and just like that, the flapjacks are out of the tin!

Cooked ok and a healthy alternative to the usual flapjack, but they were a bit tasteless and no-one else in the family would eat them.
Next time I’ll try adding dates or raisins and grated apples.
Michelle
I’m sure some dried fruit will be great additions for extra flavour!
