Chocolate Flapjacks With Cocoa Powder And Chocolate Chips
A rich and indulgent chocolate flapjack recipe topped with a smooth coating of melted chocolate. It’s the perfect make-ahead snack, cheeky breakfast or lunch-box idea.
So we’ve all had flapjacks before, but how about a chocolate flapjack made with cocoa powder, white and milk chocolate chips and covered with even more chocolate.
I have to say this is my best flapjack recipe yet and I’m so excited for you to try it. It has the perfect balance of sweetness from the golden syrup, sugar and chocolate, whilst also having a richness from the cocoa powder which adds a slight bitterness too.
This chewy chocolate flapjack recipe is so easy to make and is the ultimate snack idea for adults and kids.

Chocolate Flapjack Recipe Ingredients
Below are the few ingredients used, you’ll probably have most of the ingredients at home already. If not, you can get what you need online or at your local supermarket.
- Porridge Oats: Any brand of porridge oats is fine to use.
- Golden Syrup: Golden syrup helps to bind the dry ingredients together; it also adds a delicious sweet caramel flavour to the flapjacks.
- Butter: The butter I used was salted, feel free to use either salted or unsalted butter.
- Brown Sugar: I used light brown muscovado sugar but any light brown sugar will do. Using this type of sugar adds a good flavour to the flapjacks. Caster sugar is a good alternative.
- Cocoa Powder: Adding cocoa powder to this chocolate flapjack recipe is a must! It makes the biggest difference and adds a rich, dark and indulgent taste. This is my favourite cocoa powder ever but any brand will do.
- Chocolate: I added both white and milk chocolate chips to this flapjack recipe which is also covered in melted chocolate. Adding the chocolate topping is an optional step!
Equipment
Below is the main equipment needed:
- Baking Tin: This recipe uses a 9″ baking tin to create 12 big slices or you can make 16 medium sizes.
- Parchment Paper: Used to line the baking tin. It makes removing the flapjacks a lot easier and helps to prevent scratches.
- Mixing Bowls: You’ll need a large enough mixing bowl to mix the melted butter mixture and oats together.
- Offset Spatula: To smooth-out the chocolate topping.
How To Make Easy Chocolate Flapjacks
Below is a step-by-step guide on how to make the best homemade chocolate flapjacks EVER made with cocoa powder! Full recipe instructions are on the recipe card at the bottom.
Melt Butter, Sugar, Cocoa Powder And Golden Syrup
Step One:
Preheat the oven to 180°C, 350°F, gas mark 4, line the baking tin with parchment paper and set aside for later. Pour the butter, golden syrup, light brown sugar and cocoa powder in a large mixing bowl or pan. Melt on a medium to high heat stirring frequently.
If you’re melting the ingredients in a microwave, heat in short bursts approximately every 10 to 20 seconds and stir the mixture each time.
Add The Oats And Chocolate Chips
Step Two:
Once melted, leave the mixture to cool down for around 10 minutes. Then add the oats, white chocolate chips and milk chocolate chips into the mixing bowl and stir until evenly distributed and the oats are coated in the mixture.
Tip: Leaving the mixture to cool down before adding the chocolate chips prevents the chocolate from melting.
Bake The Chocolate Flapjacks
Step Three:
Pour the flapjack mixture into the lined baking tin and press down with the back of the spoon. Make sure the mixture is pressed down evenly and into all four corners. Bake in the oven for 15 to 20 minutes, the flapjacks will slightly brown in the oven.
Add Chocolate Topping
Step Four:
Once baked, leave the chocolate flapjacks to cool.
Break the chocolate into small pieces or cubes and place in a small mixing bowl. Melt in the microwave until melted, microwaving in short bursts, stirring frequently.
Tip: For a shiny chocolate topping, add a small tablespoon of coconut oil or an unflavoured oil like sunflower oil into the melted chocolate. It will add a glossy shine.
Step Five:
Pour the melted chocolate over the flapjacks and spread with an offset spatula. Leave to chill in the fridge or at room temperature for an hour or until the chocolate has hardened.
Do You Cut Flapjack Hot Or Cold?
Leave the flapjack to cool in the baking tin before cutting them. Whilst hot, the flapjacks are soft and more likely to break apart. Leaving the flapjacks to cool helps them keep their shape, be firmer and prevents crumbling.
Storing Chocolate Flapjacks
Chocolate flapjacks are quite easy to store. Simply place in an air-tight container and keep at room temperature. You can keep the flapjacks in the fridge, if you’re living in hot environments this will prevent the chocolate coating from melting.
If you’re not planning on eating these flapjacks right away, you can freeze them. Place the flapjack slices in a freezer-safe container, allow the flapjacks to cool down first. When you’re ready to eat them, place in the fridge for a few hours or until defrosted.
Can I Use Honey Instead Of Golden Syrup?
Yes, you can use honey instead of golden syrup in flapjack recipes. It’s a healthier alternative and an item people are more likely to have in the home already. Bear in mind, golden syrup is thicker than honey so will be better at binding the flapjack ingredients together.
Why Are My Flapjacks Dry And Crumbly?
There are a few reasons as to why your flapjacks are crumbly and dry. One reason is the type of oats used, jumbo oats are larger than porridge oats as a result they’re crumblier in texture and do not bind as well.
You may have not pressed down the flapjack mixture into the baking tin so that the mixture is compressed together, this will help prevent the flapjack mixture form falling apart when baked.
Over-baking the flapjacks is another reason as to why they’re dry and crumbly, thinner flapjacks only need around 10-20 minutes to bake in the oven, whereas thicker flapjacks will need longer.
Why Are My Flapjacks Falling Apart?
If you’re cutting the flapjacks whilst they’re still hot, this can result in the flapjacks falling apart. It’s better to wait until the flapjacks have cooled before cutting. Remember to press down the mixture before baking and do not be tempted to move the flapjacks to a cooling rack or plate whilst warm.
Make This Recipe Vegan
This recipe can easily be made vegan. Simply replace the butter used with a vegan-friendly alternative. Swap the chocolate with vegan-friendly chocolate.
