How to make easy king prawn fried rice

If you’re a fan of king prawn fried rice, then I’ve made this recipe just for you (and maybe everyone else on the internet)! It’s one of my all-time favourite dishes to make and it’s so easy.

It’s filled with peas, scrambled egg, carrots and succulent king prawns that’s tossed with rice and coated in a rich savoury sauce. I can’t think of eating anything else right now, and I think you’re going to LOVE it.

To make this dish, I use homemade leftover rice or a packet of microwavable rice, and trust me, this recipe makes it taste a lot more interesting. And when I say a lot, I definitely mean it!! It’s packed with flavour like my Singapore fried rice and it only takes me 15 minutes to make.

How to make king prawn fried rice

The Best Rice To Use

I asked my local Chinese takeaway, and the answer is jasmine rice. This is because it has a light aromatic aroma, a nice texture and it’s easy to manoeuvre in the wok.

Jasmine rice is my go-to choice, but if you don’t have jasmine rice at home, I find grains like basmati rice or long-grain rice are good alternatives.

Recipe Ingredients

Below are the ingredients I used to make this dish:

  • Prawns: I used jumbo king prawns; you may need to clean and de-shell your prawns if they’re not done already. You can also use tiger prawns or other types of meat.
  • Egg: I added an egg, but this is optional.
  • Vegetables: I kept this recipe simple by only using peas and carrots, you can add more vegetables if you like or even leave the veggies out. Make sure to cut the carrots into small square chunks.
  • Fried Rice Sauce: I mix together soy sauce, oyster sauce, sesame oil and Shaoxing wine. This combo is what will give you a tasty fried rice flavour.
  • Other Flavours & Seasonings: Salt, white pepper and garlic are added to this dish to add even more flavour. If you don’t have white pepper, you can use black pepper instead.
  • Rice: I used a day-old jasmine rice that I made the day before and kept in the fridge to chill. If you don’t have the time to make rice the day before, then you can use packet rice. If you’re using rice you cooked yourself, it needs to be one day old for best results.
  • Oil: I used vegetable oil to make this dish, but any neutral flavoured oil is good to use.

How To Make King Prawn Fried Rice

Here’s a summary of how I make prawn fried rice. You can get the full recipe instructions on the recipe card below: This is my easy method as I cook everything in one wok without taking ingredients out then added them back in later:

Step One:

Spring onions and garlic frying in wok

I add oil to my wok that’s heated over a medium to high heat. Then I add garlic, spring onions and stir-fry for one minute.

Step Two:

Peas and carrots added to wok

I add prawns to the wok and continue to stir for two minutes before adding the peas, diced carrots, salt, white pepper and Shaoxing cooking wine.

Then I add one whisked egg, leave the egg for a few seconds to cook then scramble it into pieces.

Step Three:

Rice, dark soy sauce, oyster sauce and sesame oil is added to the wok, and I stir everything together until the rice looks brown and takes on the colour. Then I turn the heat off, sprinkle extra chopped spring onions and plate it up.

My Top Tips

I like to prep all my ingredients before I start stir-frying, this prevents me from stopping and starting after every step. I chop my vegetables and whisk the egg beforehand, making the cooking process so smooth.

The reason why I add spring onions to the oil in the first step, is because it flavours the oil that the rice is later mixed into. You can also sprinkle extra spring onions on top for a fresh oniony flavour.

Do not use freshly cooked rice (that is my only rule), this is because it will be too sticky and soft as it’s full of moisture! Use day old rice, or at the very least, rice that has chilled for a few hours. A great tip to quickly cool freshly cooked rice, is to spread the rice over a tray and place it in the fridge uncovered.

Use a large wok so that you have enough space to stir fry the ingredients without it flying everywhere.

Making Homemade Rice?

Wash Your Rice Before Cooking!!: I don’t think I can stress how important this is. I do this by pouring the rice into a pot, filling it with water then mixing the rice around with my hands. I then pour the water out and repeat.

You’ll notice in your first rinse the water will be quite cloudy, but as you continue to rinse it out the water will become clearer and clearer. Do this for about 2 to 3 times or more if necessary. Make sure you wash it out a few times to get rid of as much starch as possible (starch keeps your rice sticky).

Keep Cooked Rice In The Fridge: Once your rice has cooked, pour it into a container and leave it to cool down. Once cool, cover it and place it in the fridge.

Day old rice is great to use, as fresh rice is quite sticky and can clump together. Rice that has been kept in the fridge for a day would have dried out, being less likely to turn to mush.

How To Serve

I like to serve this dish with a side of crispy salt and chilli chicken, sesame prawn toast and a generous portion of crispy beef. On occasion, I like to eat it as a main on its own (like in my pictures).

You can of course make a side of roasted veggies like this roasted tenderstem broccoli or this oven roasted courgettes.

Ingredients
 
 

  • 1 tbsp Vegetable Oil
  • 250 g Cooked Jasmine Rice
  • 10-12 King Prawns
  • 2 Garlic Cloves
  • 2 Spring Onions
  • 1 Egg
  • 50 g Peas (Handful)
  • 1 Carrot Cut into small cubes
  • To Taste Salt
  • ½ tsp White Pepper
  • 1 tbsp Shaoxing Cooking Wine

Fried Rice Stir Fry Sauce

  • 2 tbsp Oyster Sauce
  • 2 tbsp Dark Soy Sauce
  • 1 tsp Sesame Oil

Instructions
 

  • Heat a wok over a medium to high heat then add oil. Add the garlic and spring onions and stir for one minute.
    1 tbsp Vegetable Oil, 2 Garlic Cloves, 2 Spring Onions
  • Add prawns to the wok and continue to stir for two minutes. Then add peas, carrots, salt, white pepper, Shaoxing cooking wine and continue to stir.
    10-12 King Prawns, 50 g Peas, 1 Carrot, To Taste Salt, ½ tsp White Pepper, 1 tbsp Shaoxing Cooking Wine
  • Add one whisked egg. Leave the egg for a few seconds to cook before scrambling it into pieces.
    1 Egg
  • Add the rice, dark soy sauce, oyster sauce, sesame oil and stir together until the rice now looks brown.
    Turn the heat off and sprinkle extra chopped spring onions if you wish. Plate the rice and enjoy!
    250 g Cooked Jasmine Rice, 2 tbsp Oyster Sauce, 2 tbsp Dark Soy Sauce, 1 tsp Sesame Oil

How Spicy Is This Prawn Fried Rice?

For me, this prawn fried rice recipe is not that spicy but rather mild, however this is up to personal taste. To add more heat to this recipe you can add chopped chillies in step 1 and chilli powder in step 2.
