House Special Fried Rice

Chinese fried rice, packed with prawns, diced chicken and tender pieces of char siu pork!! Here’s how I make this dish…

If you’re looking for a no-fuss quick dinner, this one’s for you! You can literally add anything from bacon to beef—and it turns out mouth-wateringly good every single time.

It takes me just under 30 minutes to make, and the flavour in this special fried rice tastes just like the real deal.

And if you thought you had to make the rice in advance, think again!! I always use microwaveable rice now, and it turns out perfect. This hack saves me so much time, and now I can make this dish whenever I want.

Recipe Ingredients

Below are the ingredients I used to make this dish:

  • Jasmine Rice: I used microwavable packet jasmine rice. Generally, I like to warm the rice in the microwave for half of the instructed cooking time, then I finish it off in the wok. Instead of packet rice, you can use day-old cooked rice if you prefer.
  • Aromatics & Vegetables: To add flavour, I added diced garlic and spring onions. I also like to add peas too.
  • Seasonings: Dark soy sauce is added for that authentic flavour and colour, alongside sesame oil for the taste.
  • Meats & Prawns: To make this a house special fried rice I added pre-cooked prawns, chicken and char siu pork.
  • Egg: I like to whisk the eggs together before pouring it into the wok. Occasionally, I add a dash of salt and white pepper to the eggs for extra flavour. You don’t have to add in egg if you don’t want to (there’s already a lot going in this dish).

How To Make Special Fried Rice

Here’s a summary of how I make special fried rice. You can get the full recipe instructions on the recipe card below:

I start by adding oil to my wok that’s heated over a medium to high heat. I add garlic, chicken, char siu and prawns and stir fry for 1 to 2 minutes. Then I add in the frozen peas and continue to stir fry for 30 seconds.

Next, I pour in the whisked eggs and let it set for a few seconds before scrambling it into small pieces. Then I add in the partially warmed microwavable rice, breaking up any clumps and mixing it thoroughly.

The next step is to add the diced spring onions. Finally, I drizzle in soy sauce and sesame oil, tossing everything together until the rice turns a golden-brown colour.

My Top Tips

Avoid using freshly cooked rice, the recipe won’t work!! Freshly cooked rice holds a lot of moisture, so it will turn mushy.

I used pre-cooked meats, it’s a great way to turn leftovers into something a little more interesting. However, feel free to use raw meats and seafood too.

How To Serve

There’s pretty much everything already in this dish, so I like to keep the sides I serve simple. My go-to dishes are spare ribs, salt and pepper ribs and some more char siu pork.

You can also opt for a side of roasted veggies such as these roasted aubergines and oven-roasted courgettes. In my picture, I served it with spring rolls and salt and pepper squid too.

Ingredients
 
 

  • 250 g Cooked Jasmine Rice (Packet Rice or 1 Day Old Rice)
  • 50 g King Prawns
  • 50 g Chicken (Breast Or Thighs)
  • 50 g Char Siu Pork (Cooked)
  • 1 tsp Garlic
  • 2 Eggs
  • 1 Spring Onion
  • 50 g Peas
  • 2 tsp Oil
  • 2 tbsp Dark Soy Sauce
  • ½ tsp Sesame Oil

Instructions
 

  • Add oil to a large wok heated on a medium to high heat.
    2 tsp Oil
  • Add garlic, chicken, char siu and prawns and stir-fry for 1 to 2 minutes.
    50 g King Prawns, 50 g Chicken (Breast Or Thighs), 1 tsp Garlic, 50 g Char Siu Pork
  • Then add the peas and stir-fry for a further 30 seconds.

  • Push everything to one side of the wok. Add the egg, let it cook for a few seconds before scrambling it into small pieces.
    2 Eggs
  • Push everything to one side of the wok. Add the rice to the empty space, use the back of your spoon to break up any clumps. Then, stir-fry everything together for about 30 seconds, ensuring they are well combined.
    250 g Cooked Jasmine Rice
  • Add the diced spring onions and stir-fry for a further 15 seconds.

  • Add the soy sauce and sesame oil to the wok and stir fry until the rice turns a golden-brown colour. Remove from the heat and enjoy!
    2 tbsp Dark Soy Sauce, ½ tsp Sesame Oil
