Recipe Ingredients
Below are the ingredients needed to make these tasty coffee kisses:
- Self-Raising Flour: Self-raising flour has baking powder already in it, this will give you a fluffier and softer biscuit.
- Sugar: You’ll need caster sugar.
- Butter: You can use butter or margarine (like Stork), this is up to personal preference.
- Egg: I used a medium sized egg at room temperature.
- Coffee: I used instant coffee mixed with water to dissolve it. You can use coffee extract if you don’t have any instant coffee at home.
- Coffee Buttercream: To make the coffee buttercream: butter (or margarine), coffee and icing sugar are mixed together.
How To Make Coffee Kisses Biscuits
Below is a step-by-step guide on how to make this tasty recipe for light, fluffy and delicious coffee kisses! Full instructions are on the recipe card at the bottom.
Step One:
Preheat the oven to 180°C (gas mark 4, 350°F) and line a baking tray with parchment paper.
Add butter and caster sugar into a large mixing bowl and cream together until light and fluffy.
Step Two:
Mix a tablespoon of coffee with a tablespoon of warm water until the coffee granules have dissolved.
Then add an egg into the mixing bowl with the dissolved coffee and mix together until evenly distributed.
Step Three:
Pour the self-raising flour into the bowl and mix together until the biscuit dough has formed.
Step Four:
Scoop a teaspoon of dough, place it in the palm of your hands and roll it into a ball, then place the dough on a lined baking tray. Repeat this step for the rest of the dough.
Leave space between each ball as they will spread whilst baking in the oven.
Bake for 15 minutes in the oven, then leave the biscuits to cool down.
Step Five:
To make the buttercream, mix together a teaspoon of instant coffee with a teaspoon of water and set aside for later use.
In a mixing bowl, add butter and icing sugar and mix together until combined. Then add the dissolved coffee and mix together until evenly distributed.
Step Six:
To assemble the biscuits, spread or pipe the coffee buttercream on top of one biscuit, then top with another biscuit.
My Top Tips
Make sure the biscuits have cooled down first before assembling! If they’re still warm, the buttercream will melt and will not hold its shape.
Before making the biscuits, take the butter of out the fridge for it to be at room temperature. This will make creaming the butter and sugar easier.
The coffee kisses are best eaten freshly baked, store the biscuits in an airtight container and eat within a few days.
