Spicy Indian Masala Chips
These homemade masala chips are an explosion of Indian flavours and I just LOVE it! It’s spicy, slightly sweet and the taste is so damn good. I really think you’re going to like this!
I’ve never been a huge fan of flavoured chips, but this is the recipe that changed EVERYTHING for me. If you haven’t tried masala chips before, then you’re in for a real treat. Trust me, once you try this, you’ll be making it every day!
It’s like an Indian version of my classic dirty fries recipe, but instead of bacon and lots of cheese, it’s flavoured with ketchup, garlic and a whole bunch of spices.
One of the many reasons why I love this recipe is because it’s a bit like having chips with Ketchup, but with a twist. Instead of regular ketchup, the added spices and flavourings create a whole new level of deliciousness.
Masala Chips Or Fries
When making masala chips I tend to use McCain’s oven chips, but you can use any brand that you like. I love how effortless oven chips are to make, but I do occasionally deep fry fresh potatoes too. Regardless, any type of cooking method is fine, an air fryer is also a great alternative.
Chips or fries (I hear you ask)? Well, I usually stick with chips as they have a fluffy interior whilst also having a crispy exterior – it’s the best of both worlds! Whereas you can use fries for a crispier texture if that’s what you prefer.
If you’re from the US and wondering what I’m talking about, in the UK, what we call ‘chips’ are essentially what you refer to as ‘fries’ but slightly larger.
Recipe Ingredients
Below are the ingredients that you’ll need:
- Cooked Chips or Fries: Whether they’ve been oven-baked, deep fried or shallow fried, all methods will work perfectly for this recipe. You can even make the chips from scratch!
- Garlic: I used garlic paste (simply because less prep is required), but you can use garlic cloves and dice them into small chunks.
- Masala Chips Seasoning Mix: The secret (not so secret) spice mix includes turmeric, curry powder, salt, garam masala, coriander powder and chilli powder.
- Ketchup & Lemon Juice: I like the added sweetness Ketchup provides to the overall flavour, but you can use tomato sauce like passata as an alternative (though I think Ketchup is best). A little bit of lemon juice is added too.
- Fresh Coriander: I like to add a sprinkling of fresh coriander to tie the dish up, though this addition is optional.
How To Make Masala Chips
Making masala chips is really quick and simple! I prefer to start by preparing the sauce about 2 to 3 minutes before the chips finish cooking in the oven. This allows me to add the cooked chips to the sauce as soon as it’s ready and serve immediately.
I start by mixing together ketchup, turmeric, curry powder, salt, garam masala, coriander powder, lemon juice and chilli powder together. Some recipes also include chaat masala. If you want to add that in, add half a teaspoon. I left it out because I find it quite hard to find in most mainstream supermarkets.
I then heat a wok on a medium to high heat before frying garlic for a few seconds. Then I add the sauce mixture, letting it simmer and stirring constantly for 1 to 2 minutes or until it thickens slightly.
Last but certainly not least, I chuck in the hot chips from the oven, toss it into the sauce, and finish with a sprinkling of fresh coriander.
My Top Tips
I cooked the masala sauce in a wok, but you don’t have too; any saucepan is more than sufficient. However, I wouldn’t recommend using a white or light-coloured ceramic pan, as the turmeric and curry powder can cause slight staining.
If you’re wondering if the spices might be a bit overwhelming, trust me they’re not. I find that the ketchup helps to balance out the flavours. To be on the safe side, you can start by adding half of the seasoning mix, give it a taste then add more if you think it’s needed.
What To Serve
I have to admit, whenever I make this dish it’s all gone by the time I start thinking about making anything to eat alongside it. But if you want a few side suggestions, of course I’m going to give you some!
You can serve the chips with Indian curries like this Chicken Bhuna, this King Prawn Balti and this Chicken Rogan Josh Curry.
It’s also tasty served alongside Tandoori Lamb Chops and with these fluffy and absolutely delicious Keema Naans.

Ingredients
- 500 g Cooked Chips
- 1 tbsp Cooking Oil (Vegetable, Sunflower etc)
- 2 tsp Garlic Paste (Or Garlic Cloves)
- 3 tbsp Ketchup
- ½ tsp Turmeric
- 1 tsp Curry Powder
- ½ tsp Salt
- ½ tsp Garam Masala
- ½ tsp Coriander Power
- 1 tsp Lemon Juice
- 1 tsp Chilli Powder
- Fresh Coriander (To Garnish) (Optional)
Instructions
- Cook your chips however you want (I use oven chips). Start this recipe 2 to 3 minutes before the chips are done cooking.500 g Cooked Chips
- In a small mixing bowl, add ketchup, lemon juice and all the spices listed in the ingredients. Mix thoroughly until well combined.3 tbsp Ketchup, ½ tsp Turmeric, 1 tsp Curry Powder, ½ tsp Salt, ½ tsp Garam Masala, ½ tsp Coriander Power, 1 tsp Lemon Juice, 1 tsp Chilli Powder
- Heat a wok or saucepan on a medium to high heat and add a tablespoon of oil. Once the oil is heated, add the garlic to the pan and stir-fry for about 30 seconds.1 tbsp Cooking Oil, 2 tsp Garlic Paste
- Add the ketchup mixture and stir until evenly distributed. Leave the mixture to simmer for 2 to 3 minutes to help thicken the sauce and to cook out the spices.Stir constantly to prevent burning.
- Add the cooked chips to the wok or saucepan and toss them into the sauce until they are evenly coated. Finish by sprinkling some fresh coriander over the top, and your masala chips are ready to enjoy!Fresh Coriander (To Garnish)

Recipe Variations!!
Add Onions: Deepen the savoury profile with the addition of diced onions. Cook them for 1 to 2 minutes or until soften before adding the garlic. Then, continue with the recipe instructions. Use Sweet Potato Chips: Use sweet potato fries or chips instead of regular potatoes. Swap The Sauce: Now I haven’t tried this myself, but I can imagine it tasting great with a bbq sauce base instead of ketchup. If you try this twist, let me know in the comments!!How To Store
Whenever I have leftovers (which is rare), I store them in an airtight container and keep them in the fridge for up to 2 to 3 days. I reheat the chips in the oven or microwave, bear in mind, the chips won’t be as crispy when reheated.Nutrition
