Masala Chips (Indian Fries)

Here's how to make Indian masala chips (or fries) with this easy recipe. These chips are full of flavour and taste delicious.

Ingredients
 
 

  • 500 g Cooked Chips
  • 1 tbsp Cooking Oil (Vegetable, Sunflower etc)
  • 2 tsp Garlic Paste (Or Garlic Cloves)
  • 3 tbsp Ketchup
  • ½ tsp Turmeric
  • 1 tsp Curry Powder
  • ½ tsp Salt
  • ½ tsp Garam Masala
  • ½ tsp Coriander Power
  • 1 tsp Lemon Juice
  • 1 tsp Chilli Powder
  • Fresh Coriander (To Garnish) (Optional)

Instructions
 

  • Cook your chips however you want (I use oven chips). Start this recipe 2 to 3 minutes before the chips are done cooking.
    500 g Cooked Chips
  • In a small mixing bowl, add ketchup, lemon juice and all the spices listed in the ingredients. Mix thoroughly until well combined.
    3 tbsp Ketchup, ½ tsp Turmeric, 1 tsp Curry Powder, ½ tsp Salt, ½ tsp Garam Masala, ½ tsp Coriander Power, 1 tsp Lemon Juice, 1 tsp Chilli Powder
  • Heat a wok or saucepan on a medium to high heat and add a tablespoon of oil. Once the oil is heated, add the garlic to the pan and stir-fry for about 30 seconds.
    1 tbsp Cooking Oil, 2 tsp Garlic Paste
  • Add the ketchup mixture and stir until evenly distributed. Leave the mixture to simmer for 2 to 3 minutes to help thicken the sauce and to cook out the spices.
    Stir constantly to prevent burning.
  • Add the cooked chips to the wok or saucepan and toss them into the sauce until they are evenly coated. Finish by sprinkling some fresh coriander over the top, and your masala chips are ready to enjoy!

Recipe Variations!!

Add Onions: Deepen the savoury profile with the addition of diced onions. Cook them for 1 to 2 minutes or until soften before adding the garlic. Then, continue with the recipe instructions.
Use Sweet Potato Chips: Use sweet potato fries or chips instead of regular potatoes.
Swap The Sauce: Now I haven't tried this myself, but I can imagine it tasting great with a bbq sauce base instead of ketchup. If you try this twist, let me know in the comments!!

How To Store

Whenever I have leftovers (which is rare), I store them in an airtight container and keep them in the fridge for up to 2 to 3 days. I reheat the chips in the oven or microwave, bear in mind, the chips won't be as crispy when reheated.
