White Chocolate And Marshmallow Cornflake Cakes

White chocolate and marshmallows are a tasty combination, melted together they create the ultimate base flavour. Add in cornflakes and you’re in for a winner!

Recipe Ingredients
Below are the 4 ingredients needed for this recipe:
- Marshmallows: I like to use mini marshmallows only because it’s easier to melt. But any type of marshmallow is fine to use.
- White Chocolate: Use your favourite white chocolate (it doesn’t have to be baking chocolate).
- Cornflakes: You can use any brand of cornflakes.
- Butter: I used unsalted butter.
How To Make Marshmallow Cornflake Cakes
Below is a step-by-step guide on how to make white chocolate and marshmallow cornflake cakes. Full recipe instructions are on the recipe card.
Step One:



Add butter, white chocolate and mini marshmallows to a large pan. On a low to medium heat stir the mixture until smooth and melted. Once melted, remove from the heat.
You can also melt the mixture in the microwave on a low to medium heat. Stop the microwave every 10 to 15 seconds and give the mixture a thorough stir.
TIP: Break the chocolate into small squares before melting it.
Step Two:

Pour cornflakes into the pan (or large mixing bowl if you warmed the mixture in the microwave). Mix thoroughly until evenly combined.
Step Three:

Spoon the cornflake mixture evenly between 24 cases and chill in the fridge for 1 hour or until set.
And that’s how to make cornflake cakes with marshmallows and white chocolate! For giant cornflake clusters, spread the mixture evenly between 12 cupcake cases.
My Top Tips
Even though I made these cornflake cakes with white chocolate, feel free to use dark chocolate, milk chocolate or even caramilk.
Make sure to melt the ingredients slowly on a low to medium heat to prevent the mixture from splitting. If the mixture does split, try adding a small amount of milk to the recipe.
To make cornflake bars, press the mixture into a baking tin and chill in the fridge. Once chilled, slice into squares, rectangles or whatever shape you like.
