Recipe Ingredients
Below are the few ingredients needed for this recipe:
- Rice Krispies: I used Rice Krispies to make these Christmas puddings, but you have plenty of alternatives like Rice Pops or Rice Snaps.
- Butter (Optional): Use salted or unsalted butter, this is down to personal preference. The addition of butter is not 100% necessary, sometimes I make this recipe without it. However, butter helps to add extra flavour, richness and keeps the texture soft.
- Mini Marshmallows: Use mini marshmallows as it’s easier to melt than large and chunky marshmallows.
- Chocolate: Milk chocolate is melted with butter and marshmallows to create the Rice Krispie balls. Whilst white chocolate is needed for the decoration. Instead of milk chocolate, you can use dark chocolate.
- Holly Leaf Decorations: I bought a pack of holly leaf decorations from Amazon; I had a look at a few supermarkets near me but I couldn’t find any there.
How To Make Rice Krispie Christmas Puddings
Below is a step-by-step guide on how to make these Rice Krispie Christmas puddings. Full recipe instructions are on the recipe card:
Step One:
Add chocolate broken into small pieces and butter to a pan (or mixing bowl if you’re going to microwave it). Melt the ingredients over a low to medium heat on the hob, stirring constantly until the mixture is completely melted and well combined.
Note: If you’re microwaving the mixture, stop the microwave in short 30 second bursts and thoroughly mix to prevent burning.
Step Two:
Once the butter and chocolate have melted, add the mini marshmallows and gently stir until they have melted and combined thoroughly.
Note: If you’re microwaving the mixture, continue to stop the microwave in short 30 second bursts and thoroughly mix.
Step Three:
Pour Rice Krispies into the pan or large mixing bowl and mix together until the Rice Krispies are thoroughly coated in the mixture.
Step Four:
Scoop a tablespoon of the mixture into the palms of your hands and roll it into a ball. Continue doing this until there is no mixture left.
TIP: Measure and divide the mixture equally to get perfect sized puddings.
Place the puddings onto a large plate or baking tray lined with parchment paper, then chill in the fridge for at least 15 minutes or until the chocolate has hardened.
Step Five:
To decorate, melt white chocolate and drizzle it over the puddings. Then, place holly leaf decorations on top for a festive touch.
Decoration Ideas
As you can see from my pictures, I went with a classic white chocolate for ‘snow’ topping with holly leaves. However, there are a few more ways to decorate these beauties! I’ve listed a few of my favourite ways below:
- Pipe white chocolate and top with Christmas themed sprinkles
- Top with red and green skittles or M&Ms
- Create Santa hats by making the same mixture but with white chocolate and red food colouring. Mould the mixture into hats and place them on top.
- Use any remaining white chocolate to pipe smiley faces or Christmas shapes
My Top Tips
When moulding the mixture into pudding shapes, if you prefer to keep your hands clean, use cling film. Scoop the mixture onto the cling film, cover it, and then shape the mixture into a ball. Remove the cling film once the desired shape is achieved.
I prefer to let the mixture cool down for a few minutes. This allows it to harden slightly, making it easier to roll into balls since it’s not overly sticky.
It’s easy for the chocolate mixture to seize or burn in the microwave if it’s heated for long periods of time. To avoid this, microwave in short bursts and thoroughly mix each time.
If the chocolate keeps seizing and you’re having difficulty making the mixture, skip adding the butter in the recipe or consider using baking chocolate.
How To Store & Freeze Rice Krispie Christmas Puddings
If you have any leftovers, keep them in an airtight container at room temperature for up to 5 days. You can keep them in the fridge, but the texture does harden. If you do choose to store in the fridge, leave the puddings out at room temperature before eating.
You can also make this Rice Krispies dessert ahead for Christmas! Simply place them in the freezer for up to 3 months. I would decorate the puddings with chocolate and icing decorations just before serving.
