Easy cheese and bacon scones

Why have cheese scones when you can have bacon and cheese scones? They’re a delicious upgrade that tastes so good and the smell is incredible.

Diced bacon, black pepper and a whole load of grated cheese are added to the scone mixture before being baked until beautifully golden brown.

They taste cheesy, buttery and the added bacon is a real hit. These cheese and bacon scones are a guaranteed savoury treat!

Savoury Scones

There are so many sweet scone recipes out there and savoury scones are often overlooked. But they taste so good too…

My really cheesy cheese scones are flavoured with chives and black pepper. I find scones are a great party buffet snack and they’re also great for picnics too.

This scone recipe has a lot of cheese and smoky bacon pieces in it, which creates even more flavour.

Watch How To Make It

Recipe Ingredients

Below are the ingredients needed for this recipe:

  • Self-Raising Flour: Self-raising flour has a raising agent already added to it.
  • Butter: You’ll need to use hard block butter as opposed to soft spreadable butter. Use straight from the fridge.
  • Black Pepper: Added for extra flavour.
  • Baking Powder: This help the scones to rise when baking in the oven.
  • Bacon: I used smokey back bacon. Smoky bacon adds a distinctive smoky taste.
  • Grated Cheese: I used mature cheddar cheese for an extra cheesy flavour.
  • Milk: Use full fat milk straight from the fridge.
  • Egg: Eggs are used to glaze the scones before being baked in the oven.

How To Make Cheese And Bacon Scones

Below is a step-by-step guide on how to make these easy cheese and bacon scones. Full recipe instructions are on the recipe card.

Step One:

Bacon pieces on a plate

Put the bacon into a frying pan and cook for 1 to 2 minutes on each side or until cooked through.

Place the cooked bacon pieces onto a plate lined with tissue paper to drain any excess oil. Then dice into small pieces.

Step Two:

Rubbing-in butter

Preheat the oven to 200°C (gas mark 6, 400°F) and line a baking tray with parchment paper.

Add flour, black pepper and baking powder to the mixing bowl and mix together until evenly distributed.

Add cubes of butter to the mixing bowl, using the ‘rub-in-method’ use your fingertips to combine the butter and flour together until it resembles breadcrumbs.

Step Three:

Adding cheese and bacon to bowl

Add bacon and grated cheese to the mixing bowl and mix together until evenly distributed.

Step Four:

Scone dough

Pour milk and gently mix together until the dough comes together. Do not overwork the dough!

Step Five:

Rolled out scone dough gently

Place the dough on a lightly floured surface and gently roll out using a rolling pin. You could also flatten the dough using your hands.

You want the dough to be roughly 2.5cm in thickness.

Step Six:

Cutting circles with cookie cutter

With a cookie cutter, cut-out circles and place on a lined baking tray. Try not to twist the cookie cutter when pressing down.

Step Seven:

Scones on baking tray

Whisk an egg and brush it over the top of the scones and sprinkle a few pieces of grated cheese on top. Bake in the oven for 15 to 20 minutes.

How To Serve Cheese And Bacon Scones

These scones are best eaten freshly baked, warm and fresh. You can serve them with red onion chutney or cut them in half and spread lots of butter.

Or, you can serve it alongside these bacon themed recipes below:

  • Bacon And Cheese Turnovers
  • Homemade Dirty Fries

Store in an airtight container and keep for up to one week (they’re best eaten on the day).

Recipe Substitutions And Variations

  • Bacon: You can use any cut of bacon you like. I used back bacon but streaky bacon or unsmoked bacon are variations you could use.
  • Ham: Make ham and cheese scones! Instead of bacon you can use ham.
  • Use Plain Flour: You can make scones with plain flour, make sure to add extra baking powder to give the scones a good rise.
  • Herbs: Add diced herbs like oregano, thyme or rosemary to add extra flavour to the scones.

Bacon And Cheese Scones Recipe FAQs

Can you freeze cheese and bacon scones?

Yes, you can freeze cheese and bacon scones!

To freeze, place the cut-out scones onto a lined baking tray (do not glaze them or sprinkle extra cheese). Place in the freezer for a few hours until frozen, then place into a freezer bag or container and put it back into the freezer. Put a layer of parchment paper to prevent sticking.

What makes scones rise best?

Using a combination of self-raising flour and baking powder help the scones to rise when baking in the oven.
An extra tip is to align the scones side by side so that they’re close to touching. This help the scones rise upwards as opposed to spreading out.

My Top Tips

Try not to roll the dough more than once, manipulating the dough too much can make the scones tough. You can roll the dough into a rough square or rectangle and cut the dough into squares with a knife. You won’t need a cookie cutter and all parts of the dough are used up.

Don’t have eggs? You can use milk instead to glaze the scones! Using milk will help create a brown glaze. Cheese will be sprinkled on top, so it doesn’t matter which glaze you use.

Use butter and milk straight from the fridge! The colder the better as this helps to prevent over-spreading.

If you don’t like crispy pieces of bacon, fry the bacon a little less than how you like it. So when it’s baking in the oven it will cook to your liking.

Notes

If the dough is too dry and is not coming together, you may need to add more milk. Only add a small amount at a time, you do not want a wet sticky dough.
