Put the bacon into a frying pan and cook for 1 to 2 minutes on each side or until cooked through. Place the cooked bacon pieces onto a plate lined with tissue paper to drain any excess oil. Then dice into small pieces.
Preheat the oven to 200°C (gas mark 6, 400°F) and line a baking tray with parchment paper.
Add flour, black pepper and baking powder to the mixing bowl and mix together until evenly distributed.
Add cubes of butter to the mixing bowl, using the ‘rub-in-method’ use your fingertips to combine the butter and flour together until it resembles breadcrumbs
Add bacon and grated cheese to the mixing bowl and mix together until evenly distributed.
Pour milk and gently mix together until the dough comes together. Do not overwork the dough!
Place the dough on a lightly floured surface and gently roll out using a rolling pin. You could also flatten the dough using your hands. You want the dough to be roughly 2.5cm in thickness.
With a cookie cutter, cut-out circles and place on a lined baking tray. Try not to twist the cookie cutter when pressing down.
Whisk an egg and brush it over the top of the scones and sprinkle a few pieces of grated cheese on top. Bake in the oven for 15 to 20 minutes.

If the dough is too dry and is not coming together, you may need to add more milk. Only add a small amount at a time, you do not want a wet sticky dough.
