If you thought life couldn’t get any better, wait until you try this char siu chow mein! A popular Chinese takeaway classic that you can make easily at home.

Fresh egg noodles are tossed into aromatic vegetables and roasted pork char siu. The flavour in this chow mein is INSANE and the char siu pork adds a delicious sweet, savoury and bbq flavour.

This recipe is a great way to use up leftover char siu or any type of roasted pork. Plus, it’s a simple family-friendly recipe you can make easily throughout the week – what more could you ask for!

What Is Char Siu Chow Mein?

Char siu chow mein is a Chinese takeaway dish that features tender Chinese bbq pork also known as char siu. Typically, char siu is stir-fried in a wok with vegetables, fresh egg noodles and a mouth-watering sauce.

The taste is a delicious blend of Chinese noodles with Cantonese style bbq pork which tastes truly amazing.

What Does Chow Mein Taste Like?

Where do I even start! Chow mein has a savoury and rich-umami flavour due to the use of sauces such as oyster sauce and soy sauce.

Additional flavours come from the aromatic vegetables like onions, garlic and ginger. Plus, proteins such as chicken, pork or prawns contribute even more taste to chow mein dishes.

This char siu chow mein has a mix of savoury flavours but also a slight sweetness from the Chinese bbq pork. This pork is oven roasted and basted in a char siu sauce which adds a sweet barbecue flavour to the dish.

Recipe Ingredients

Below are the few ingredients needed for this recipe:

  • Egg Noodles: I like using fresh egg noodles, but you can also use dried egg noodles.
  • Char Siu Pork: This chow mein recipe features Chinese char siu pork. If you don’t have char siu you can make this recipe with any other type of pork you have. Pork shoulder is great to use for Chinese cooking. I’m using leftover char siu, if you need to make it, here’s my char siu pork recipe.
  • Garlic Cloves: You can dice fresh garlic cloves or buy minced garlic to save a few minutes. Any is fine for this recipe.
  • Spring Onions: Dice spring onions into equal lengths, use the white part of the spring onions in the stir-fry and the green parts to garnish.
  • Chow Mein Sauce: The stir-fry sauce is made from a mixture of oyster sauce, sesame oil, light soy sauce and dark soy sauce.

Can I Use Dried Egg Noodles?

Yes, you can use dried egg noodles, make sure to boil it according to package instructions before starting this recipe.

I was taught (in Chinese cooking classes) to always put freshly boiled egg noodles into a bowl of cold water once cooked, as this prevents further cooking and keeps the texture springy.

How To Make Pork (Char Siu) Chow Mein

Below is a step-by-step guide on how to make homemade char siu pork chow mein. Full recipe instructions are on the recipe card:

Step One:

Make the chow mein sauce by mixing together oyster sauce, light soy sauce, dark soy sauce and sesame oil in a small bowl.

Step Two:

Heat a wok or frying pan on a medium to high heat and add a tablespoon of oil. Fry the char siu pork for 2 to 3 minutes.

Step Three:

char siu, garlic and spring onions in wok

Add the diced garlic and white part of the spring onion and stir fry for 30 seconds or until the spring onions start to soften.

Step Four:

Add fresh egg noodles into the wok and stir fry until the egg noodles have heated up, this should take 2 to 3 minutes on average. Sprinkle the remaining spring onions and stir.

Step Five:

Pour the sauce over the egg noodles and stir until it thickens and coats the noodles.

How To Serve Char Siu Chow Mein

I like serving this pork chow mein as a main dish, but you can also serve it as a side dish alongside many other dishes. I’ve listed a few options below:

How To Store

Store leftover char siu pork chow mein in an airtight container and keep it in the fridge for up to 2 to 3 days. When you are ready to eat it, reheat in the microwave or in a wok until piping hot throughout.

Can You Freeze Pork Chow Mein?

You can freeze chow mein, if you want to freeze it, keep it in a freezer-safe and airtight container and store in the freezer for up to 3 months.

Defrost in the fridge and reheat in the microwave or wok.

What To Make With Leftover Char Siu

My Top Tips

When making noodle dishes, starting with aromatics like ginger, garlic and onions help to infuse the oil which provides a delicious coating on the noodles and vegetables.

If you’re using dried egg noodles, once the noodles are cooked and blanched in cold water. Drizzle some oil over the noodles to prevent it from clumping and sticking together.

If you find that the wok you are using is too small for your ingredients, you can fry the egg noodles and add sauce to it in smaller batches. This ensures an even sauce courage and cooking of the noodles.

Char Siu Chow Mein Recipe Variations

Add More Vegetables: You can add more vegetables to this noodle dish like bok choy, beansprouts, baby sweetcorn and cabbage. Most vegetables are great for stir-frying so you can pretty much use whatever you have in the fridge.

Change The Meat: If you don’t want to use char siu pork to make this chow mein, then you can use roasted chicken, prawns or tofu instead. To get the char sui flavour, marinate your choice of protein in this Chinese bbq sauce (that’s used to make char siu).
