Greggs yum yum recipe

If you’re a Greggs fan like me, then today is your lucky day! I’m sharing my easy yum yum recipe with you, and oh my, the taste is delicious!

I’m not joking when I say they taste great. They’re pillow-soft, light and I like to cover them in an icing glaze just like Greggs. They taste exactly the same and trust me, they’re quite simple to make too.

It’s taken me some time to develop this copycat recipe as I really wanted to get the texture and taste just right, and I think this recipe does just that. It’s mouth-watering, fluffy, so indulgent and it’s a sweet treat that I can’t stop eating!

Easy yum yum with icing glaze

Yum Yum (Twisted Doughnuts)

Not everyone might have heard of Greggs or a yum yum before, in case you’re wondering, it’s basically a twisted doughnut that is deep fried. It’s then glazed with icing for a slightly sweet outer coating.

The glazing (and shape) is what I think makes a yum yum truly a yum yum, so the glazing is a must!! I’m joking (only slightly), but even if you plan on leaving it plain, nothing beats a freshly baked and moist texture.

The main differences between a yum yum and a doughnut are that yum yums have a stretched-out shape and a flakier layered texture. So, if you like doughnuts then you’ll definitely like this too.

Recipe Ingredients

Below are the ingredients I used to make these yum yums. You’ll notice that the ingredients are fairly basic and widely accessible:

  • Strong White Bread Flour: This type of flour is high in gluten, which makes it ideal for making bread type recipes. It’s best to use strong white bread flour, avoid using plain flour.
  • Fast Action Yeast: You’ll want to use fast action yeast; it quickens the process of making these yum yums.
  • Salt And Sugar: I used caster sugar.
  • Butter: I used unsalted butter.
  • Water: You’ll want to use lukewarm water, if the water is too hot then it will kill the yeast.
  • Egg: I used a medium sized egg at room temperature.
  • Icing Glaze: To make the icing glaze, icing sugar and water are mixed together and poured over the yum yums when freshly fried and still hot.

How To Make Greggs’ Yum Yums

Here’s a summary of how I make these tasty yum yums. You can get the full recipe instructions in the recipe card below:

Step One:

Flour, salt, sugar and yeast in mixing bowl with chunks of butter

Flour, salt, yeast and sugar are added to a large mixing bowl and I mix everything together. Then I gently rub the butter into the flour mixture, just enough to break it up.

TIP: Gently rub the butter into the flour, you’ll want chunks of butter rather than the mixture resembling breadcrumbs.

Step Two:

Cling film covering resting dough

I pour lukewarm water and an egg into the mixing bowl and mix together. You may need to bring the dough together with your hands. Then I cover the dough with cling film and leave the dough to prove for 30 minutes.

Step Three:

Rolling dough and folding it

I place the dough on top of my lightly floured work surface and roll the dough into a long rectangle shape, then I fold the two ends into the middle. Then, I close the dough together like a book and repeat this step 3 to 4 times.

Once done, I place the dough back in the mixing bowl and cover it with cling film, then I leave it to rest for 30 minutes.

Step Four:

Cutting dough into strips

The dough is rolled again into a long rectangle, and I cut the dough into 16 strips. Then I cut a line in the middle of each strip, leaving a 2 cm gap of dough at both ends.

I twist each strip into a twirl and place them onto a lined baking tray, cover it with cling film and leave it to double in size for at least 45 minutes (watch the video to see how I did this)

Step Five:

Towards the end of the 45-minute resting time, I like to make the icing mixture by mixing together icing sugar and water.

The yum yums are fried on a medium heat for 2 minutes on both sides or until golden brown. Once each yum yum is done, it’s placed on a cooling rack, and I immediately coat it in the icing mixture. Don’t forget to turn the yum yum over and coat all sides!

My Top Tips

The temperature you fry the yum yums in is very important! Frying them between 170°C-180°C will give you a beautifully golden yum yum. If the oil temperature is too low, then they will absorb a lot of oil and become really oily.

If the yum yums are browning too quickly whilst being raw in the middle, then the oil temperature is too high. Turn the heat down, this will reduce the speed at which they’re browning.

Don’t add too many yum yums into the oil at once, this will lower the oil temperature. I placed one at a time, but you can add more or less depending on the pan size you’re using.

To test if the oil is hot enough place a bit of dough into the oil, if it starts to sizzle instantly then it is ready.

Ingredients
 
 

  • 500 g Strong White Bread Flour
  • 14 g Fast Action Yeast 2 Packets
  • 1 tsp Salt
  • 4 tbsp Sugar
  • 90 g Butter Block Butter
  • 250 ml Lukewarm Water
  • 1 Egg

Icing Glaze

  • 200 g Icing Sugar
  • 5 tbsp Water Or More If Needed

Instructions
 

  • Pour flour, salt, yeast and sugar into a large mixing bowl and mix together until evenly distributed.
    500 g Strong White Bread Flour, 14 g Fast Action Yeast, 1 tsp Salt, 4 tbsp Sugar
  • Gently rub the butter into the flour mixture, just enough to break it up.

    90 g Butter
  • Pour lukewarm water and an egg into the mixing bowl and mix together. You may need to bring the dough together with your hands.
    250 ml Lukewarm Water, 1 Egg
  • Then cover the dough with cling film and leave the dough to rest for 30 minutes.
  • Lightly flour your work-surface and place the dough on top. Roll your dough into a long rectangle shape, then fold the two ends into the middle. Then close the dough together like a book, repeat this step 3 to 4 times.
  • Place the dough back in the mixing bowl and cover with cling film. Leave to rest for 30 minutes.
  • Roll the dough again into a long rectangle, cut the dough into 16 long strips. Then cut a line in the middle of each strip, leaving a 2 cm gap of dough at both ends.
  • Twist each strip into a twirl, watch the video to see how I did this. Place the twisted strips onto a lined baking tray, cover with cling film and leave to double in size for at least 45 minutes.
  • Make the icing mixture by mixing together icing sugar and water. Do this towards the end of the 45-minute resting time.
    200 g Icing Sugar, 5 tbsp Water
  • Fry the yum yums on a medium heat for 2 minutes on both sides or until golden brown. Once each yum yum is done, place on a cooling rack and immediately coat in the icing mixture.
    Don't forget to turn the yum yum over and coat all sides.
