Instructions
Preheat the oven to 180°C (gas mark 4, 350°F) and line a baking tray with parchment paper.
Place the butter and sugar into a large mixing bowl and cream together until the mixture is light and fluffy.
Then add the self-raising flour and white chocolate chips into the mixing bowl and mix together until parts start to clump together.
Use your hands to bring the dough together to form a ball.
With a spoon, scoop a walnut size of dough and place it into the palm of your hand. Roll the dough into a ball and place on a lined baking tray. Leave around a 5cm gap between each ball, as they do spread in the oven.
With a fork, gently press down each ball to flatten it and leave a pattern.
Bake the fork biscuits in the oven for 13 to 15 minutes, they’ll look quite pale yet slightly golden. Leave the biscuits to cool down for a few minutes before moving to cool down entirely on a cooling rack.
