Aubergine & Garlic Stir-Fry

Aubergine, garlic, olive oil and sea salt; it really can’t get any easier than this. This dish uses simple ingredients and is one of those dishes that goes well with everything.

Another recipe brought back from Greece, following my prawn spaghetti, but this time it’s not pasta. It’s stir-fried aubergines with olive oil, sea salt and garlic. It sounds so simple, and it is, but the flavours from this are so fresh and delicious.

It’s the type of side I like to serve alongside spaghetti, and they work so well together. Though of course, I am known to eat a bowl of this by itself. It’s the addition of sea salt and garlic that makes me struggle to put it down.

You don’t need much for this recipe and it cooks in only 20 minutes too!! So, here’s how I make it…

Recipe Ingredients

The ingredients I used are listed below:

  • Aubergine: I used a large aubergine.
  • Flavourings: Sea salt and garlic.
  • Olive Oil: I used olive oil, but feel free to use what you have.

My Top Tips

Dont be tempted to add more oil to the pan in the beginning, the aubergines will absorb it and you’ll be left with an oily dish. Two tablespoon of oil is enough, but you’ll need a good non-stick pan and to stir often.

Don’t switch sea salt for regular salt, as sea salt makes the flavours in this dish pop. I also recommend using fresh garlic gloves instead of garlic paste which isn’t as pungent and fresh in flavour.

How To Store

Keep leftovers in an airtight container, in the fridge, for up to 2 to 3 days.

Ingredients
  

  • 2 Medium Aubergines (600g)
  • 2 tbsp Olive Oil
  • 1 tbsp Crushed Sea Salt (Or To Taste)
  • 3 Garlic Cloves

Instructions
 

  • Use a sharp knife to dice the aubergines into cubes and finely chop the garlic.
  • Heat a pan over a medium-high heat and add 1 tablespoon of olive oil.
    2 tbsp Olive Oil
  • Add the aubergines to the pan and stir-fry for 12 to 15 minutes or until softened.
    2 Medium Aubergines
  • Once softened, add the remaining olive oil, diced garlic and sea salt to the pan and stir-fry for a further 2 minutes. Serve and enjoy.
    3 Garlic Cloves, 1 tbsp Crushed Sea Salt
