Make sure the shortcrust pastry is cold, cold, cold! The colder the pastry is the less sticky it will be. Use pastry that has been stored in the fridge and has been left out for 5 to 10 minutes to thaw. Leaving the pastry to thaw prevents it from breaking apart when rolling it out.
