Place the prawns, egg white, chopped spring onions, cornflour, sesame oil, salt, white pepper, light soy sauce, garlic cloves and sugar into a blender or food processor and blitz together until a paste has formed.
Spread the prawn paste mixture up to the edges and equally over the 4 slices of bread.
Place the bread (prawn side down) into a plate or bowl of sesame seeds and gently press down, the sesame seeds will stick to the prawn mixture.
Heat oil on a medium heat and place the bread (prawn side down) into the oil, fry for 1 to 2 minutes on each side or until the sesame seeds are golden. A temperature of around 180°C is perfect.
Place the fried prawn toast on a plate lined with paper towel to absorb excess oil. Then cut the prawn toast into four triangles and enjoy. They taste great served with sweet and sour dipping sauce.
