Preheat your oven to 200°C (gas mark 6, 180°Fan).
Slice the spring onions, courgettes into 1cm circles and the red bell pepper into long strips. Then add all the vegetables to your roasting tray.
2 Whole Courgettes, 200 g Asparagus, 100 g Mangetout, 1 Red Bell Pepper, 3 Spring Onions
Season the vegetables with salt, black pepper and garlic granules.
1 tsp Salt, 1 tsp Black Pepper, 2 tbsp Garlic Granules
Place the salmon fillets on top of the vegetables skin-side-down.
4 Salmon Fillets
In a small mixing bowl, mix together the glaze ingredients then generously brush the glaze over the salmon. Drizzle any remaining glaze over the vegetables.
3 tbsp Dark Soy Sauce, 3 tbsp Honey, 1 tbsp Minced Garlic, 1 tsp White Pepper, 1 tsp Chinese 5 Spice
Roast in the oven for 20 minutes or until the salmon is cooked through. Top with a drizzle of chilli oil (optional).
