- 2.3 kg Gammon Joint (5.1 lb)
- 2 Bay Leaves
- 1 Rosemary Sprig
- Cloves
Boiling Gammon
Place the gammon joint in a large pot and cover the gammon with water. Add bay leaves, rosemary or other herbs for added flavour.
Bring the water to a boil before lowering the heat to a gentle simmer for 1 hour and 30 minutes (leave pot uncovered).
After boiling the gammon, place it on a large roasting tray lined with foil.
Remove the layer of skin leaving the layer of fat. With a sharp knife, score the gammon in a criss-cross diamond shape.
Honey Mustard Glaze
To make the glaze, mix clear honey and English mustard together in a small mixing bowl.
Using a basting brush, spread the glaze evenly over the boiled gammon joint and gently press cloves into the gap.
