Preheat your oven to 180°C (160°C Fan, gas mark 4) and line a baking tray with parchment paper. I used a 35cm x 25cm baking tray (14" x 10")
Add honey and peanut butter to a large mixing bowl. Microwave on high heat for 1 to 2 minutes, or until the peanut butter is soft enough to stir.
120 g Honey, 130 g Peanut Butter
Add the oats, spices, seeds and nuts, then mix thoroughly until everything is coated.
230 g Oats, 1 tsp Cinnamon, 50 g Peanuts, 50 g Chia Seeds, 50 g Pumpkin Seeds
Pour the granola mixture into a lined baking tray, add another layer of parchment paper on top, then use the palms of your hands to press and condense the granola mixture into place.
Bake in the oven for 15 minutes or until the oats have turned golden in colour.
Once removed from the oven, allow the granola to cool down completely before using your hands to break it into small clusters.
