Stir together the wet ingredients - Add the honey and vanilla extract into the bowl with peanut butter and mix well.
Once all your wet ingredients have come together it will look like this.
Add your dry ingredients to the mixing bowl - Pour your oats, chopped chocolate peanuts and chocolate chips into the wet ingredients and stir well. This does take a bit of time as the mixture seems quite dry at first but will join together as you continue to mix.
Scoop the mixture into a baking tray lined with parchment paper - Press the mixture down till it reaches the sides of your baking tray. To make this process easier you can place another sheet of parchment paper on top of your mixture and use the spoon to press it down.
Time to chill - The last step in this chocolate chip and peanut putter granola bars recipe is to put them in the fridge for at least 1 hour, I like to chill mine overnight.
Once chilled, with a knife cut the mixture into rectangles or squares.
