Banana Gingerbread Granola (So Good)

Here's how to make a homemade banana gingerbread granola. Serve with Greek-style yoghurt for a delicious breakfast.

Ingredients
 
 

  • 230 g Oats
  • 2 Ripe Bananas (Medium)
  • 100 g Honey
  • 1 tbsp Cinnamon (Or 1 tsp)
  • 1 tsp Ginger
  • 1 tsp Nutmeg
  • 50 g Chia Seeds
  • 50 g Pumpkin Seeds

Instructions
 

  • Preheat your oven to 180°C (160°C Fan, gas mark 4) and line a baking tray with parchment paper. I used a 35cm x 25cm baking tray (14" x 10")
  • In a large mixing bowl, add two ripe bananas and use a fork to mash them. Then add honey and mix until evenly distributed.
    2 Ripe Bananas, 100 g Honey
  • Add your oats, spices and seeds and mix until evenly distributed.
    230 g Oats, 1 tbsp Cinnamon, 1 tsp Ginger, 1 tsp Nutmeg, 50 g Chia Seeds, 50 g Pumpkin Seeds
  • Pour the granola mixture into a lined baking tray, add another layer of parchment paper on top, then use the palms of your hands to press and condense the granola mixture into place.
  • Bake in the oven for 20 minutes or until the oats have turned golden in colour.
  • Once removed from the oven, allow the granola to cool down completely before using your hands to break it into small clusters.
