Preheat your oven to 180°C (160°C Fan, gas mark 4) and line a baking tray with parchment paper. I used a 35cm x 25cm baking tray (14" x 10")
In a large mixing bowl, add two ripe bananas and use a fork to mash them. Then add honey and mix until evenly distributed.
2 Ripe Bananas, 100 g Honey
Add your oats, spices and seeds and mix until evenly distributed.
230 g Oats, 1 tbsp Cinnamon, 1 tsp Ginger, 1 tsp Nutmeg, 50 g Chia Seeds, 50 g Pumpkin Seeds
Pour the granola mixture into a lined baking tray, add another layer of parchment paper on top, then use the palms of your hands to press and condense the granola mixture into place.
Bake in the oven for 20 minutes or until the oats have turned golden in colour.
Once removed from the oven, allow the granola to cool down completely before using your hands to break it into small clusters.
