To make these biscuits, a lemon drizzle icing is made. Lemon juice is mixed with icing sugar which is drizzled over the biscuits.

Below are the few ingredients needed to make these lemon drizzle biscuits:
- Plain Flour & Baking Powder: Use plain flour and not self-raising flour.
- Butter: Use unsalted butter or Stork butter.
- Caster Sugar: Use white caster sugar.
- Vanilla Extract: Added for extra flavour, you could use lemon extract instead for a strong lemon flavour.
- Egg: Use eggs at room temperature
- Lemon: Lemon juice and lemon zest are added to the cookies for flavour.
- Lemon Drizzle Icing: Icing sugar and lemon juice are mixed together to make the lemon drizzle icing.
How To Make Lemon Drizzle Biscuits
Below is a step-by-step guide on how to lemon drizzle biscuits. Full recipe instructions are on the recipe card at the bottom.
Step One:
Place butter and caster sugar into a large mixing bowl and whisk until light, creamy and fluffy.
Step Two:
Add an egg and vanilla extract into the mixing bowl and whisk together until combined.
Step Three:
Add flour, baking powder, lemon juice and lemon zest into the mixing bowl and whisk until a dough has formed.
Step Four:
Scoop a generous teaspoon amount of dough, place it onto the palm of your hand and roll the dough into a ball. Place on a baking tray, leave space between each ball as they will spread in the oven.
Bake in the oven for 12 to 15 minutes and allow the cookies to cool down once baked.
Step Five:
Mix icing sugar and lemon juice together in a small mixing bowl. Add a tablespoon of lemon juice and mix at a time. Add more if necessary.
Pour the icing into a piping bag and drizzle it over the cookies. You could use a teaspoon to drizzle the icing over the biscuits.
How To Store
To store, place the biscuits in an airtight container and keep for up to 3 days.
If you want to freeze the biscuits, place in a freezer-safe container and freeze for up to 3 months.
Variations
Instead of decorating the biscuits with a lemon drizzle icing, you can coat the biscuits in a lemon drizzle glaze by mixing lemon juice and caster sugar together. The topping will be crunchy and so tasty.
For a strong lemon flavour throughout the biscuits, you can use lemon extract instead of vanilla extract. Alternatively, you can zest two lemons instead of one to boost the lemon flavour.
